Yeshi Egg Salad Sandwich

  • 8 eggs hard boiled and cooled
  • 1/2 cup Caesar Yeshi
  • 1 green onion thinly sliced
  • 1 rib celery thinly sliced
  • salt & pepper to taste


  1. Cut eggs in half.  Remove yolks and chop whites.
  2. Mash yolks with Yeshi and salt & pepper to taste until smooth and creamy.
  3. Add remaining ingredients and stir well.
  4. Serve on bread or over lettuce.
